The Asteri Standard
Coffee carries place: soil, altitude, climate, process and human care. Every exceptional lot has a moment when sweetness, aroma, acidity and body fall into balance. Our work is to find that moment, and protect it.
Through our strict internal quality protocol, each coffee is assessed, sample-roasted, cupped and observed across its resting window. We consider density, moisture, varietal, process and intended brew method before deciding how the coffee should be roasted, rested and released.
Some coffees are best served by the precision of micro-roasting. Others benefit from the stability of a larger Signature batch. Some need clarity and restraint after first crack; others require deeper development to reveal sweetness, body and balance.
The method is chosen in service of flavour, never convenience.
