Las Lajas is an on-farm micromill operated by the Chacón family in Sabanilla de Alajuela, Central Valley, at 1,500–1,700 m. The Yellow Diamond anaerobic honey process ferments ripe cherries in a sealed tank for 84 hours with all mucilage retained, then dries them on raised beds for 15–20 days. The Chacón family’s focus on precise, low-impact processing produces a cup with concentrated red fruit, pear brightness, floral lift and a sweet grenadine finish.

Las Lajas is one of Costa Rica’s most respected family-run coffee projects, led by the Chacón family in Sabanilla de Alajuela, Central Valley. After inheriting family land, the Chacón siblings chose to rethink their approach to coffee, placing environmental care, stable employment and family tradition at the centre of their work. In the early 2000s, Oscar Chacón and Francisca Cubillo created the Las Lajas Ecological Benefit, allowing them to process their own coffee with greater control and creativity. Their honey and natural processes helped define a more adventurous side of Costa Rican specialty coffee. For this lot, the Chacón family selected Typica Lima as part of their programme to diversify beyond conventional Caturra and Catuaí. Its aromatic character and refined fruit expression provide an elegant foundation for the intensity created by the Yellow Diamond process: 84 hours of anaerobic fermentation in a sealed tank with all mucilage retained, followed by 15–20 days of drying on raised beds. The result is an expressive, layered cup with concentrated red-berry sweetness, pear freshness, rose-petal aromatics and a grenadine finish. How to brew it

Best as Pour-over.

Brew at adventurous filter. Start at 60g coffee per litre of water, off-boil. Adjust grind a click finer if it tastes thin, coarser if it tastes harsh.

Good to know

Questions before you brew

Whole beans stay fresher for longer because grinding exposes more surface area to oxygen. If you own a burr grinder, always pick beans and grind just before you brew. Choose ground only if you don't have a grinder at home. When you pick ground, tell us the brew method (espresso, filter, cafetière, AeroPress, moka) and we grind Las Lajas Alma to the exact particle size for that method.
