From the farm

Cañas Verdes, Boquete · La Huella · Volcán Barú

Producer · La Huella / Café de Panama — family farm, Cañas Verdes

This lot comes from a private estate in Panama’s Boquete / Volcán region, where Geisha thrives at 1,600–1,900m on volcanic slopes. The estate handles cherry at an on‑site wet mill and follows a fully washed protocol with slow, controlled drying to keep clarity and aromatics intact. Heavy annual rainfall and cool mountain nights encourage slow cherry development; harvest runs January to March, with meticulous picking and lots managed in small batches for consistency.

Origin notes

High above Boquete, on the slopes of Panama's Volcán Barú, La Huella began as a small farm with a bold ambition: to explore coffee at its most refined. In 2011, Katarina and Pedro began cultivating micro and nano-lots in one of the world's most celebrated coffee landscapes, where altitude, volcanic soil and cool mountain air create exceptional conditions for slow cherry development. Panama Geisha N97 Lot 5 represents the most exclusive side of this work. Carefully selected from a limited lot, it reflects La Huella's pursuit of clarity, aroma and elegance. This is not an everyday coffee; it is a tasting experience built around delicacy, rarity and precision. Since its early years, La Huella / Café de Panama has continued to develop its reputation for quality, receiving recognition through Great Taste awards and expanding into Europe through a collaboration with Nika and Jernej. The result is a bridge between Panama's exceptional terroir and a carefully curated luxury coffee experience. Asteri note: A collector-level Gesha from the slopes of Volcán Barú, crafted for slow brewing, quiet attention and a memorable tasting ritual.

How to brew it

Best as Filter.

Brew at bright, energetic moments. Start at 60g coffee per litre of water, off-boil. Adjust grind a click finer if it tastes thin, coarser if it tastes harsh.

Good to know

Questions before you brew

Whole beans stay fresher for longer because grinding exposes more surface area to oxygen. If you own a burr grinder, always pick beans and grind just before you brew. Choose ground only if you don't have a grinder at home. When you pick ground, tell us the brew method (espresso, filter, cafetière, AeroPress, moka) and we grind Volcán N97 to the exact particle size for that method.
