Finca El Paraíso sits high in Cauca at 1,960 metres, cultivating the uncommon Wush Wush variety in small, carefully managed lots. The team pursues experimental, lab-like processing—using a vacuum-based antimaceration protocol of controlled dehydration, leachate imbibition and dry-air dehumidification—to control oxidation and precisely shape flavour. These deliberate steps produce limited, highly specific lots intended to showcase varietal aromatics through repeatable, measured techniques rather than large-scale production.

The farm is known for using controlled, experimental processing to create coffees with intense aromatic clarity and memorable fruit profiles. This coffee is produced using antimaceration, a vacuum-based process designed to manage dehydration and flavour concentration with precision. The method helps build intensity while reducing uncontrolled oxidation, allowing the coffee's fruit and floral character to become more vivid. Wush Wush is already known as an unusual and aromatic variety, and in this expression it becomes especially striking. Expect violet, wild berries, ripe tropical fruit, red apple and light spice, with lively acidity and a silky body. It is a Black Label coffee for adventurous drinkers who want flavour to feel immersive and memorable.

How to brew it

Best as Filter.

Brew at adventurous black label tasting. Start at 60g coffee per litre of water, off-boil. Adjust grind a click finer if it tastes thin, coarser if it tastes harsh.

Whole beans stay fresher for longer because grinding exposes more surface area to oxygen. If you own a burr grinder, always pick beans and grind just before you brew. Choose ground only if you don't have a grinder at home. When you pick ground, tell us the brew method (espresso, filter, cafetière, AeroPress, moka) and we grind El Paraíso Wush Wush Noir to the exact particle size for that method.
