From the farm

Piendamó, Cauca · Finca El Paraíso

Producer · Diego Bermúdez · Finca El Paraíso

Finca El Paraíso sits high in Cauca, Colombia at roughly 1,960 metres, where small parcels of Caturra receive meticulous attention. The team focus on experimental processing and run an in-house vacuum-based antimaceration protocol that tightly controls dehydration and aroma concentration. Meticulous sorting, controlled fermentations and precise drying prioritise repeatable, high-quality micro-lots over volume, letting process become the primary expression of the farm’s terroir and technical craft.

Origin notes

Caturra Antimaceration offers a more accessible entry into Finca El Paraíso's rare-process world while still carrying the intensity and polish of the collection. Produced in Cauca, Colombia, this coffee uses the farm's vacuum-based antimaceration process to create a vivid and modern cup. The process gradually dehydrates the cherries in a controlled environment, helping concentrate sweetness and aromatic compounds. With Caturra, this creates a profile that is bright, chocolate-led and distinctive, with cherry-cola fruit, hazelnut and a prolonged floral finish. This coffee is ideal for customers who want something unusual and luxurious, but slightly less delicate than the Geisha expressions. It is expressive, modern and highly giftable, a strong Black Label release for the Finca El Paraíso capsule.

How to brew it

Best as AeroPress.

Brew at process-led tasting. Start at 60g coffee per litre of water, off-boil. Adjust grind a click finer if it tastes thin, coarser if it tastes harsh.

Good to know

Questions before you brew

Whole beans stay fresher for longer because grinding exposes more surface area to oxygen. If you own a burr grinder, always pick beans and grind just before you brew. Choose ground only if you don't have a grinder at home. When you pick ground, tell us the brew method (espresso, filter, cafetière, AeroPress, moka) and we grind El Paraíso Caturra Ember to the exact particle size for that method.
