This lot comes from the Cocatrel cooperative in Carmo da Cachoeira, Sul de Minas, where many smallholders pool harvests, quality control and drying infrastructure. Lots are grown at 900–1,200 m on a mix of Catuai, Mundo Novo and Bourbon varieties and dried on patios with mechanical finish-drying to stabilise naturals. Regular rainfall of 1,200–1,600 mm and cooperative processing deliver dependable, scalable lots suited to roasters and cafés that need consistent stock.

Castanhas Do Brazil comes from Cocatrel Cooperative in Três Pontas, Sul de Minas, one of Brazil's important coffee-growing regions. Founded in 1961, Cocatrel has grown into one of the country's largest cooperatives, supporting more than 6,000 members through buying points, traceability systems and quality-focused coffee selection. More than half of Cocatrel's members farm less than 10 hectares, making the cooperative an important structure for small and medium coffee producers. Coffees delivered to the cooperative are electronically tagged and recorded with unique traceability details, helping growers follow where their coffee goes and allowing quality lots to be identified more clearly. Castanhas Do Brazil, meaning "Nuts of Brazil", is selected mainly from the Carmo de Cachoeira area for its sweet, creamy hazelnut-praline character. The coffee is dried in static boxes, where air circulates gently through deep layers of cherry while temperature is carefully controlled below 40°C. After drying, the coffee rests before milling, helping create a cleaner and more fruit-forward Brazilian natural profile. In the cup, expect orange, lime, hazelnut, caramel and dark chocolate. Comforting, creamy and elegant, with a polished nutty sweetness. How to brew it

Best as Espresso.

Brew at espresso and milk drinks. Start at 60g coffee per litre of water, off-boil. Adjust grind a click finer if it tastes thin, coarser if it tastes harsh.

Questions before you brew

Whole beans stay fresher for longer because grinding exposes more surface area to oxygen. If you own a burr grinder, always pick beans and grind just before you brew. Choose ground only if you don't have a grinder at home. When you pick ground, tell us the brew method (espresso, filter, cafetière, AeroPress, moka) and we grind Castanhas Aurelia to the exact particle size for that method.
