The moka pot creates coffee with depth, warmth and presence. It is rich and concentrated, sitting somewhere between filter and espresso. Bold enough for milk, expressive enough to drink black.

What You Need
A simple stovetop setup
Moka pot
Choose the right size for the amount you want to brew.
Fresh coffee
Medium-fine grind, slightly coarser than espresso.
Hot water
Starting with hot water helps reduce bitterness.
Heat source
Low to medium heat is best.
A cloth or towel

How to Brew
Six gentle steps
Add hot water to the base
Fill the lower chamber with hot water up to just below the safety valve. Starting hot helps the coffee spend less time on direct heat.
Fill the basket
Add ground coffee to the basket and level it gently. Do not tamp. Moka pots need water to move through the coffee without too much resistance.
Assemble carefully
Screw the moka pot together using a towel, as the base may be hot.
Brew on gentle heat
Place over low to medium heat with the lid open. The coffee should flow steadily, not violently.
Remove before sputtering
When the stream turns pale and begins to sputter, remove the pot from heat. This helps avoid bitterness.
Serve immediately
Stir the coffee gently before pouring to even out the strength.
How to Adjust Flavour
Small changes, balanced cup
Bitter or burnt
Use lower heat, remove earlier, or grind slightly coarser.
Weak or thin
Grind a little finer or check that the basket is evenly filled.
Harsh and dry
Use slightly less heat and stop the brew earlier.
Rich but balanced
