Finca Etiopia sits high on the Apaneca-Ilamatepec range around 1,400–1,600 metres where Los Naranjos Cafe9 manages on-farm processing and drying. The team retains mucilage for honey processing, using shaded patios and careful sorting to manage fermentation and moisture during the December–March harvest. Regular rainfall and cool mountain nights give steady cherry ripening and allow the farm to focus on consistency and controlled drying across small, traceable lots.

Origin notes

Finca Etiopia is one of the flagship farms of Los Naranjos Café, created as a tribute to Ethiopia, the birthplace of coffee. Located near the slopes of the Ilamatepec Volcano, the farm benefits from rich volcanic soils, high elevation and a climate well suited to slow coffee cherry development. Established in 2018, the 34.5-hectare farm was carefully revitalised with quality and conservation in mind. Only part of the land is cultivated, while the rest is preserved as natural forest to protect native flora and fauna. Coffee grows under the shade of native trees, supporting biodiversity while helping the cherries mature slowly and evenly. This Geisha honey lot reflects the farm’s focus on detail. Cherries are tested for sweetness before harvest, then carefully floated and sorted to remove underripe, overripe or lower-density fruit. The coffee is pulped while retaining its mucilage, allowing the honey process to create a layered sweetness and silky texture. The result is a rare and expressive cup: violets, blueberry, almond paste, honey and ruby grapefruit, with an Ethiopian-like floral brightness and a clean, elegant finish. Asteri note: A rare Salvadoran Geisha from Los Naranjos Café, grown under shade near Ilamatepec Volcano and honey processed for floral sweetness, citrus lift and refined complexity.

How to brew it

Best as Filter.

Brew at filter, pour-over, sweet espresso. Start at 60g coffee per litre of water, off-boil. Adjust grind a click finer if it tastes thin, coarser if it tastes harsh.

Questions before you brew

Whole beans stay fresher for longer because grinding exposes more surface area to oxygen. If you own a burr grinder, always pick beans and grind just before you brew. Choose ground only if you don't have a grinder at home. When you pick ground, tell us the brew method (espresso, filter, cafetière, AeroPress, moka) and we grind Finca Etiopia Honey — FSC‑7963 to the exact particle size for that method.
